Moist Pumpkin Spice Muffins



I made these muffins last Monday. They were Delicious! There is a Cream Cheese Frosting Recipe, but I didn't use it...trying to eat a little healthier. I found these beauties at Pioneer Woman Cooks. Check out here site...she gives great step by step instructions and has amazing pictures.

Muffins:

1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
4 tablespoons butter, cut into pieces
1 heaping cup pumpkin puree
1/2 cup evaporated milk
1 egg
1 1/2 teaspoons vanilla
1/2 cup Walnuts or Raisins (optional!)
2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Preheat oven to 400 degrees. Generously grease 12 muffin tins.

Sift flour, sugar, baking powder, cinnamon, ginger, nutmeg, and salt. Cut in butter with two knives or a pastry blender until all incorporated. In a separate bowl, mix together pumpkin, evaporated milk, egg, and vanilla. Pour pumpkin mixture into the flour mixture. Add raisins. Fold gently until mixture is just combined. Pour into greased muffin pan—batter hardly ever fills all twelve unless you keep it down to 1/2 full. Sprinkle generous amounts of cinnamon-sugar over the top of each unbaked muffin.
Bake for 25 minutes. Allow to cool in pan for 15 minutes, then remove and allow to cool. Ice with cream cheese frosting.

Cream Cheese Frosting

1/4 cup softened butter
4 ounces cream cheese
1/2 pound powdered sugar
1/2 teaspoon vanilla

Mix all ingredients on high until soft and whipped. Spread onto completely cooled muffins, or place into a large pastry bag with a large star tip and go crazy!

Navajo Tacos


Navajo Taco Fry Bread:
2 c. flour
1 c. water
½ to ¾ t. salt
3 t. baking powder
Mix together, put in ball and break in pieces. After rolled out pieces deep fat fry in hot oil. **If you don’t have time to make homemade fry bread, buy Rhodes dough instead & thaw until ready to fry.

Top fry bread with the following:
Taco Meat
Taco Flavored Pinto Beans (I soak and cook them in the crockpot all day and then season them.)
Shredded cheese
Sour cream
Lettuce
Tomatoes
Onions
Olives

Macaroni Grill Bread



Ingredients:
1 T. yeast
1 T. sugar
1 c. hot water
Let the ingredients above sit and rise for about 5 minutes in mixer.
Add slowly the following with the dough hook on mixer.
1 ½-2 1/2 c. flour (I use close to the higher end)
1 T. fresh rosemary
1 t. salt

Directions:
Let rise in bowl until double the size. Roll dough into one large round loaf, or two small. Bake at 400 for 15-20 minutes, or until top is golden brown. When out of the oven, melt butter all over the top and sprinkle with salt.

Easiest bread that I have ever made.

Jodie McAllister’s Biscuits


Ingredients:
2 c. water
½ c. sugar
2 yeast cakes
¼ c. lukewarm water
1 T. sugar
2 eggs (beaten)
4 T. Shortening
1 T. Salt
6-7 c. sifted flour

Directions:
1. Boil water. Add ½ c. sugar and cool to lukewarm.
2. Mix yeast, T. sugar and ¼ c. water and let sit.
3. Mix ingredients from step 1 and 2 together when both are lukewarm.
4. Add eggs, shortening to yeast mixture.
5. Add salt to flour and sift 4 cups of flour into yeast mixture and beat.
6. Add rest of flour and mix well until just barely sticky.
7. Let rise in a greased bowl until it doubles (a couple of hours).
8. Punch down. Put in a refrigerator for a day or more.
9. Roll out half of the dough at a time(1/2 In. thick).
10. Cut the dough with a round cookie cutter and brush with butter. Crease dough in the middle with a knife and fold over and pinch edges. Roll the lip under and brush with butter again.
11. Cover with a towel on pan and let double in size (couple of hours).
12. Bake at 400 deg for 10 min.

Worlds Best Banana Bread


Ingredients:
½ c. butter
1 c. sugar
2 eggs, beaten
4 bananas, finely crushed
1 ½ c. flour
1 t. baking soda
½ t. salt
½ t. vanilla
1/2 c. Walnuts (optional)

Directions:
1. Cream together butter and sugar.
2. Add eggs and crushed bananas.
3. Combine well.
4. Sift flour, soda and salt. Add to creamed mixture. Add vanilla.
5. Pour into greased and floured loaf pan.
6. Bake at 350 for 60 min.
